Apple Butter Pork Tenderloin with Mustard Cream Sauce

Ingredients:

butter |

| 1 cup |

small apples, peeled, cored and diced |

| 1/2 cup |
|
white wine or apple juice (or a mix of both) |

| 1/4 cup |

water (if needed) |

cream (heavy) |
|

dried prunes coarsely chopped |

| 1 tbsp |
|
whole grain mustard |

Preparation:

In a heavy bottomed pan, brown pork on all sides in butter and oil on medium heat. Reserve on plate.

Add the onions to the pan and cook on medium heat for 2-3 minutes.

Deglaze the pan with all the white wine or apple juice and scrape bottom of pan to include the brown bits in sauce. Add diced apples and chopped prunes, cook for 5-8 minutes.

Add 1/4 cup of water if needed and cook 2 minutes more. Add cream and mustard; mix well.

Cut the pork in slices and place in sauce and cook on medium heat until done.
